Caveman Recipes: “Guacamole En Masse”

If you’re like me, you probably put guacamole on everything. One problem I ran into when I first started living a Paleo / Primal Lifestyle was the cost of the food. I tried taking the organic / grass fed beef route but by the time I left the store I was completely broke. Every shopping trip would be $100.00 plus and I did around 3 shopping trips a week. After analyzing my receipts I noticed a lot of money was going into these $7.00 tubs of guacamole that I would consume every 3 days.  After a while I developed my own recipe for creating a week’s full of delicious guacamole for less than the price of a tub ($7.00) from whole foods. This recipe takes under 5 minutes to produce a week’s supply of guacamole.

Randy’s Guacamole En Masse Recipe

Prep Time: Less than 5 Minutes

Ingredients:
Guacamole (Paleo / Primal Friendly, in sealed container from either Trader Joe’s (called Avocado's Number Brand) or Costco (pictured below) to use as a base. Make sure the ingredients are all natural. The Costco one is the cheapest and pictured above)
½ Onion Diced (or Whole Onion if you like your guacamole crunchy/full of flavor)
3 Ripe Avocados (they should be more on the brown side and soft to the touch, save yourself money and check ads before you go grocery shopping to see where they’re on sale. I try to keep them at 50 cents each. I’ll also buy extra un-ripened ones if they’re cheap and store them in plastic bags in the fridge to ripen myself later)
½ Lime (The lime juice helps slow the oxidizing of the avocados)
¼  Head of Garlic Minced  (this is optional but I literally put garlic in everything)

The Guacamole I Buy From Costco

This is the Guacamole package that I buy from Costco.

Instructions:

1) Open guacamole package and dump into a large bowl

2) Add in diced onions, minced garlic, and squeeze all the lime juice into the bowl

3) With a butter knife begin to gut your 3 avocados. This is done easiest by cutting them in half. Don’t forget to save the pits.

4) Put the pits aside we’ll use them later...

5) Dump ALL 3 avocados into the bowl

6) With two forks (one in each hand) begin mashing all the ingredients together until the consistency is to your liking.

7) Throw the pits back in. This also helps the guacamole from oxidizing. I like to spread the pits out so they get as much guacamole surface area as possible. (A little trick from my mom, Thanks Mom!!)

Congratulations! You just made a week’s supply of guacamole. Those Costco pre-made guacamoles last a long time in the fridge if sealed. You can make 3 batches of Guacamole En Masse from 1 package from Costco. If you use the Trader Joe’s brand you can make 2 batches (they only come with 2 guacamole packages in each pack).
